Is everyone ready for Thanksgiving tomorrow? I’m not going to lie. I’m not.

But, I did go to the grocery store today to buy all the stuff for what I’m bringing. We were assigned the salad, homemade rolls (because my husband..yes you heard me….makes the best from scratch rolls on the planet), and my butternut squash casserole. Yum. It was a madhouse, but thankfully, 2 out of my 3 kids got to go into the play area while I shopped. There’s something to be grateful for.

But, we’ve all got food on the brain right? And, thankfulness? So, I tell you one thing that I’m seriously grateful for. My crockpot.

I know it sounds silly, but honestly, it’s the best cooking contraption when you have kids. I am so much more motivated to cook first thing in the morning than I am at 4 pm when kids are under my feet and they’ve worn me down for the day. So, preparing a good meal ahead of time, is perfect for me. And, I LOVE not having to rush around and think of something when I’m the most grouchy (and hungry). So, one thing I can honestly say that I’m truly thankful for all the time (and not just on Thanksgiving) is that little crockpot of mine.

Last night, I made a Creamy Crockpot Chicken Noodle Soup, so I thought I’d share the recipe with you. I haven’t done that in a while. I love this soup because the ingredients are stuff that you usually have on hand, it’s easy, and my kids love it. My kind of meal. 🙂

Creamy Crockpot Chicken Noodle Soup

Here’s what you’ll need:

Ingredients

  • 1 10 oz. can of cream of chicken soup
  • 1 10 oz. can cream of mushroom soup
  • 5 cups water
  • 2 large chicken breasts, still slightly frozen
  • 1 9-10 oz. package frozen mixed veggies
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic salt
  • 2 cups dried egg noodles

Instructions

  1. Defrost frozen chicken just enough to cut into cubes.
  2. In your crock pot, add both soups and whisk in the 5 cups of water until well blended.
  3. Then, add frozen chicken, vegetables, pepper and garlic salt.
  4. Cut pepper in half if your kids sometimes complain of things being "too spicy". We get that a lot around here. 🙂 Cover, and cook on low heat for 6-8 hours or on high heat for 4 hours.
  5. If cooking on low, switch to high 20 minutes prior to eating and add the dried egg noodles.

*Don’t overcook noodles or they will become very soft and mushy.

    Yum! And I so agree....I loved my crockpot and I'm dying to get one here in Germany. But that's easier said than done as it's not a typical German appliance. I tried ordering one and it wasn't great. My options are limited and boy do I miss it! Have a happy Thanksgiving!

    My husband has strictly forbidden me from EVER cooking chicken in the crockpot again after a particularly nasty dinner involving white chili. But I might have to try this anyway. Looks good.
