We LOVE soups. You may have noticed because I’ve shared a few of them here. I like them mostly because they are usually one pot meals, and I can hide veggies in them and my kids will eat them. I made this recipe this week for dinner and my two year old ate it.

This Easy taco soup is surprisingly full of veggies, and is hearty and perfect for a cold fall or winter day.
I let my kids dip chips in it too, so that always helps.
This recipe comes from my amazing sister in law who is coincidentally named, Meridith. She made this for us years ago, and it’s been a staple ever since!
One of the reasons I love this taco soup recipe is because it has canned ingredients that you can stock up on, and when you’re out of meal ideas, you can get this one simmering on the stove in about 20 minutes.
With canned beans, canned beef broth, canned potato soup, and canned tomatoes, it really is a great soup to whip up quickly. Just make sure you’ve got carrots and celery hanging out in your fridge too, and you should be mostly all set.
Taco seasoning gives it the spice, and everything nice (see what I did there)? Then you can use ground beef for this taco soup or ground turkey. Either way it has plenty of flavor. I don’t eat beef, so I stick with the turkey.
So, let’s dive in to the ingredients and everything that makes this taco soup with ground turkey amazing.
Easy Taco Soup
Ingredients for Easy Taco Soup with veggies:
1 lb. Ground Turkey or Beef
1 Chopped Onion
1 Pkg. Taco Seasoning Mix
1 qt. Crushed tomatoes
2 Cans Kidney Beans
2 Cans Cream of Potato Soup
1 Green Pepper Chopped
1 Cup Carrots
1 Cup Celery
1 Can Beef Bouillon
1 Small Can Tomato Sauce
2 teaspoons pepper
1 tsp. garlic salt
To make the soup, brown hamburger and onion. Drain any excess fat. Add remaining ingredients. Bring to a boil, and simmer slowly for 2 hours. Serve topped with cheese and crumbled tortilla chips.

Ingredients
- 1 lb. Ground Turkey or Beef
- 1 Chopped Onion
- 1 Pkg. Taco Seasoning Mix

I recently tried your spiced sweet potato and lentil – YUM!! Came back for more recipes. I couldn’t find a can of beef bouillon at the store. I did find beef consumme. Will that work? or was it supposed to be a beef bouillon cube or can of beef broth? Thanks!! Looking forward to trying this one and the Chalupa soup! I’m a big fan of yours Meredith!!
